Peanut Butter Cookies

We’ve had these cookies in the lobby for our pups for 3+ years and often get asked what the recipe is. We did get it from Allrecipes but we’ve adjusted it quite a bit so here’s our version:

  • 2 1/2 cups whole wheat flour
  • 2 eggs
  • 1/2 cup canned pumpkin
  • 2 tablespoons creamy peanut buttter
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Preheat the oven to 350 degrees
  • Mix together the eggs, pumpkin, peanut butter, salt, and cinnamon in a bowl.
  • Add 2 cups of flour to the mix and reserve a 1/2 cup of flour
  • Mix well and add water as needed to make the dough workable, it will be dry and stiff
  • Knead in the remaining 1/2 cup of flour
  • Make the dough into a disk roughly 2″ high by 6″ round and refrigerate for 1 hour
  • After an hours roll out the dough into 1/8″ thickness using flour spread on the dough as needed to roll it out flipping it over and rolling until your reach the desired thickness
  • Bake in a preheated oven 12 minutes or until brown
